Tofu Carrot Salad; Vegetarian Food

Ingredients use vegan versions:
- 4 cups shredded carrot- 1/4 cups raisins
- 6 oz canned crushed pineapple, drained
- 8 oz Soft 1% fat Tofu
- 3 Tablespoons fresh lemon juice
Directions:
1. Blend Tofu with lemon juice in blender until creamy.2. Mix together in large bowl, shredded carrot, raisins and pinapple.
3. Add Tofu/lemon juice mixture and mix together.
4. Let chill in refrigerators for 15-30 minutes before serving.
Serves for: 8
Preparation time: 10 minutes
