- 4 cups shredded carrot
- 1/4 cups raisins
- 6 oz canned crushed pineapple, drained
- 8 oz Soft 1% fat Tofu
- 3 Tablespoons fresh lemon juice

Directions:

1. Blend Tofu with lemon juice in blender until creamy.
2. Mix together in large bowl, shredded carrot, raisins and pinapple.
3. Add Tofu/lemon juice mixture and mix together.
4. Let chill in refrigerators for 15-30 minutes before serving.

Serves for: 8

Preparation time: 10 minutes

Preparation:

3. Garnish with finely chopped fresh coriander / parsley.

Serve cold.

- 4 cups spinach leaves
- 2 cup(s) water

- 2 tablespoon(s) butter
- salt and pepper to season

Preparation:

1.Wash the spinach leaves and discard the thick stems. Boil along with the water for 8 minutes or till the spinach is well cooked. Cool and puree in a blender. Keep aside.
2.Heat the butter in a pan. Add the chopped onions and sauté on medium heat for 3 minute(s) or till the onions are transparent. Now, add the plain flour and fry briefly on low heat.
3.Add now the spinach puree, milk, salt and pepper. Simmer on low heat for 3 minute(s).
4.Add the fresh cream just before serving.

Serves for: 4
Cooking time (approx.): 14 minutes
Style: Indian Vegetarian
Serve hot with: cheese crackers.

- 2 cakes of yellow tofu
- 300 grams rice straw mushrooms
- 5 chilies
- 10 gloves of garlic
- 1 tsp. salt
- 1 cup holy basil leaves
- 2 spur chilies
- 1/2 cup vegetable oil
- 1 tbsp light soy sauce
- 1 tsp sugar
- 5 tbsp water

Preparation:

1. Pound the chilies, garlic cloves and salt in a mortar until ground
2. Wash the mushrooms and cut them into halves
3. Cut each tofu cake into quarters and cut those quarters into thin slices
4. Heat the oil over medium heat and when hot, fry the tofu until golden
5. Remove all but app. 3 tbsp of the oil and fry the chilly - garlic mixture until fragrant.
6. Add the mushrooms and tofu and stir and turn for a minute
7. Add the water and cook until tender
8. Slice the spur chilies and add them together with the basil leaves
9. Season to taste with soy sauce and sugar.
10. Serve the Pad Krapao Tho-Hu sai Hed hot.

- 1 cup margarine
- 4 cups sugar (make your own if you want - blend sugar and cornstarch)
- 2 tablespoon vanilla
- 4 tablespoon soymilk
- 1/2 cup cocoa powder ( or more)
- dash of salt

Directions:

Margin should be at room temperature when being placed in bowl. Blend until mushy, and then add vegan powdered sugar, salt, vanilla, chocolate and soymilk. You can add in more soymilk to make it a bit smoother but not too much. Spread on cake and enjoy.

Serves for: 1

Preparation time: 10 min

- 1 cup angel mushrooms
- 2 cups cabbage

- 3 lemon grass stems cut into 1 cm parts
- 1/2 cup of galangal slices
- 4 kaffir lime leaves
- 1 tbsp. sugar
- 2 tbsp. salt
- 3 tbsp. lime juice
- 2 tbsp. light soy sauce
- 1 bush chopped coriander
- 9 bird chilies
- 6 cups of coconut milk

Preparation:

1.Clean and wash the mushrooms and cut in half.
2.Wash cabbage and tomato and cut into bite sized chunks.
3.Place the coconut milk in a pot over medium heat and bring to a boil, while stirring constantly.
4.Add the galangal, lemon grass, torn kaffir leaves and boil for a minute.
5.Add cabbage, mushrooms and tomato, and use salt, sugar and the chili to season to taste.
6.Before serving hot, sprinkle with coriander.
7.Add the crisp fried chilies or crushed fresh chilies and sprinkle with chopped spring onion.
8.Serve the Tom Kha Hed hot.

- 1 chopped spring onion

Preparation:

1. Clean and wash the mushrooms and cut into half if big.
2. Bring water to a boil, add the galangal, lemon grass, torn kaffir leaves and the mushrooms.
3. When the mushrooms are tender, add the soy sauce and remove from heat.
4. Add lime juice until source and salt taste is in balance.
5. Add the crisp fried chilies or crushed fresh chilies and sprinkle with chopped spring onion.
6. Serve the Tom Yam Hed hot

- 1 chinese kale
- 1 tbsp. ground roasted peanuts
- 2 tbsp. sugar
- 1 tbsp. vinegar
- 2 tbsp. light soy sauce
- 1/2 cup water
- 2 tbsp. oil

Preparation for:

1. Wash all vegetables well.
2. Cut the kale into short lengths and remove hulls and root tips from the - ean sprouts.
3. Heat oil in a wok over high heat and add the shiitake mushrooms, radish, kale and carrot and stir fry for several minutes.
4. Add the remaining ingredients and continue to stir fry until done.
5. Serve the Pad Thai with lime wedges, ground roasted peanuts and bean sprouts.

She is an only child of a Fertility Specialist father and a live-at-home mom. She sometimes says that because she thinks "housewife" sounds like she's married to the house. Some of her hobbies include dancing (jazz, tap, ballet) reading, writing, ice skating, and of course, acting.

Natalie Portman is a strict vegetarian, so if you take her on a date, don't go to a steakhouse for dinner. She has more diet menu. She decided to become a vegetarian when she was 8. She witnessed doctors demonstrate laser surgery on a chicken when she was at a medical conference with her father. This helped her stop eating meat.

Summer Fruit Smoothie

Ingredients for use vegan versions:

- 2 cans (16 ounces each) apricots
- peaches
- pears
- pineapple OR fruit cocktail: in any combination
- packed in lite or heavy syrup or juice*
- 2 tablespoons fresh lemon juice
-1 pint vanilla ice cream or frozen yogurt or fruit sherbet

Preparation:

1.Drain the fruit, reserving 1 cup of the syrup or juice.
2.Purée the fruit with the reserved syrup and lemon juice in a blender.
3.Add the ice cream in small chunks, blending just until smooth.
4.Serve immediately in tall glasses with straws.
*Note: Choose syrup or juice depending upon your preference.

Preparation Time: Approximately 5 minutes

Cook Time: Approximately 5 minutes

4. Also, many people like to play with the amount of vegan sugar and mango to vary the sweetness- that is always good, but try it this way first.

Begin a Soft Vegetarian Food with Fruit Sushi

Ingredients for food:

- Sushi rice
- Sweetened coconut milk
- Vanilla or lemon pudding
- Gelatin
- Thin slivered strawberries
- Thin slivered melon
- Raspberries
- Raspberry syrup
- Mint for garnish

Preparation for fruit sushi:

fruit sushi rool1. Make the rice; then, instead of mixing it with sushi su, mix sweetened coconut milk through the rice to dress it.

2. Line a baking dish with plastic wrap and spread the rice in a layer approximately 1/2" thick. Make regular vanilla pudding (or you can use lemon pudding), adding a little gelatin to make it firm. When pudding has cooled, spread it over the rice layer and refrigerate overnight (it needs to be very firm and hold its shape).

3. Dip cookie cutter in water and then push it all the way through the rice/pudding mixture (you can use any shape or size cookie cutter). Build a stack with the cutout rice/pudding mixture, and add slivers of melon, strawberries, etc. Garnish with mint and drizzle raspberry syrup around the plate and on the sushi.

4. For a variation: Cut out a round piece of rice/pudding mixture, wrap a thin slice of melon around it and fill it with raspberries.

Variations for:

Can be served alone or with an accompaniment, such as low fat custard or Crème Auglaize and pureed berries

World Peach Smoothie"Visualize World Peach" Smoothie

Ingredients:
- 6 ounces organic peach yogurt
- 1 c. frozen peaches
- ¾ c. freshly squeezed orange juice
- ½ banana
- 1 T. milled flaxseed
- 1 t. ginger juice
- 2-3 ice cubes
- 1 strawberry
- life mint
- salt a little
Procedure: Blend until smooth.
Serves for ; 2.

Spring Carrot Soup:May be served hot or cold.

Carrot SoupIngredients:
- 7 large carrots cut into 1 inch pieces
- 2 thinly sliced onions
- 8 cups vegetable stock
- 1 t. ground ginger
- 1 t. coriander
- 1/8 t. dried chipotle pepper or cayenne
- 1/8 t. white pepper
- 3 T. chopped chives
- Plain yogurt (to garnish)
- Freshly chopped parsley (to garnish)
Procedure:
- Steam or boil carrots in water 20 minutes, just until tender.
- Place in large kettle with: 2 thinly sliced onions and 8 cups vegetable stock.
- Simmer, just until onions begin to soften.
- Cool slightly, then puree carefully in blender in small batches.
- Add salt, ground ginger, coriander, dried chipotle pepper or cayenne, white pepper, chopped chives.
- Garnish with a swirl of plain yogurt, freshly grated carrots and lots of freshly chopped parsley.

Elemental Fire Salad

Organic SaladIngredients:
- 1 c. dried Middle Eastern Cous Cous, cooked, drained and cooled
- 2 medium sized beets, roasted, cooled, peeled and julienne
- 9 shiitake mushrooms sliced and gently sautéed
- ½ c. toasted slivered almonds
- 3 T. chopped fresh parsley
- 3 T. chopped fresh chives
- 2 T. diced Kalamata olives
Dressing:
- ½ c. olive oil
- 3 T. cider vinegar
- 2 T. fresh Basil, chopped
- T. fresh Thyme, chopped
- 1 T. dried Marjoram
- Salt and pepper to taste
Procedure:
- Chill. Re-taste to correct salt and pepper.
- Serve with mixed organic salad greens and warm bread.

adjusting to a new bodyAdjusting to a changing body is about more than just looks, though. Lots of teens base their self-image on how their bodies feel and perform. Until a year ago, Wes, 15, was a lean, fast sprinter who could always be relied on to win the race for his track team. Wes has ADHD, and some days it seemed like running was the only thing he could do well. So when he started developing a stockier, eat vegetarian, more muscular physique and his sprint times got longer, Wes' confidence took a serious bruising.

Changes in our bodies' appearance, performance-even such minor details as the way they smell - are all perfectly normal parts of growing up. So what can you do to help yourself adjust physically and emotionally? Here are some ideas.

Beware - don't compare!

It's natural to look at our friends for comparison. But It's also a bad idea to compare ourselves to celebrities and models. In reality, most people don't look like the limited body types shown in the media. (Actually, the models often don't look like that either: Many of those "perfect" bodies got that way through photo editing, not nature.)

Forget magazine ads - check out family snapshots instead.

Before you look at your folks and freak out, consider that they're no longer teens. People's bodies change as they grow older. Ask to see pictures of your parents, aunts, and uncles when they were your age. This will give you a chance to talk to them about their own development.

Treat your body well.

A new bodyMaking educated choices about food(vegetarian food) and exercise is part of developing a mind and life of your own. Healthy eating and exercise can also give you some control over how your body turns out. Plus, exercise is a mood booster. If your changing body has you feeling sad or confused, it may help to go for a walk, play with your dog, or throw a Frisbee with your friends.

Befriend your body.

Feeling like you don't know your body any more? Just like a friendship that grows and evolves, keeping in touch with our bodies takes time. Like friends, our bodies can let us down at times. But with a little work and understanding, it's possible to bounce back.

Walk tall - even if you're not!

As your body changes, it can help to work on good posture and walk with a sense of confidence. After doing this for a while, you'll probably become more confident too.

There's not much you can do about your height or development, but you can focus on the things that you really like about yourself. Maybe it's your curly hair or the dimple you get when you smile. Maybe it's that you are a really thoughtful person or you are good at making people laugh. Ultimately, when you think of the people in your life that you care about the most, what they look like probably has very little to do with how much you like them.
